We had so much fun this weekend making Vegan Swedish Pancakes and for the first time ever we tried to make a video to show just how easy it is to be vegan. My sweet 6-year old daughter Edna wanted to be the hostess of the “cooking show” and my wonderful 12-year old daughter Matilda kindly helped me with the editing of all the videos that we made.
This ensured the safety of the the computer, so I wouldn’t throw it out of the window out of sheer frustration. This technology nonsense easily gets the best of me sometimes. Ha, ha! However, Matilda breezed through it and found shortcut after shortcut and had mastered the program in no time. She also added fun sounds to the video and helped me set up a YouTube channel! Absolutely fabulous!
My 10-year old son Henrik also helped by reviewing the video and adding ideas. My husband Tim took the 3 beagles out for a walk while we cooked, so they wouldn’t try to steal our yummy pancakes when we weren’t looking. Ha, ha! So it was a total family affair. Together we can sure make miracles happen!

Easy Vegan Swedish Pancakes
Ingredients
- 2 cups Flour
- 2 cups Plant-based Milk
- 1 can Aqua Faba (The bean water from a can of chickpeas)
- 1/2 tsp Vanilla
- A pinch Salt
Instructions
- Mix all the ingredients, whisk together until all the lumps are gone. Let sit for 5 minutes.
- Heat the skillet on high, use oil or vegan butter for frying. Fry for about 1 1/2 minute per side.
- Turn when the top side of the pancake is just getting dry.
For Serving
- Enjoy with lots of fruits and berries. Our favorites are raspberries, blueberries and strawberries.

Omg, I love beagles! Aren’t they just the best? I have 2 beagle mixes that we adopted from a local rescue, and they are just utter delights. (I love my cats, too.) I assumed your husband took them for a walk, because of barking. But to keep them from eating your pancakes — that sounds about right, too!
And this recipe looks lovely. I’ll have to give it a try. I love simple-ish kinds of recipes, because I’m not a fan of cooking, but I’ve found that sometimes simple recipes are the best recipes. 🙂 Thanks for sharing, both the recipe and the adventures you had with your family!
