Oil free chickpea salad with tuna

We love this healthy and delicious Easy Vegan Oil-free Chickpea “Tuna” Salad Sandwich recipe. It was one of the first recipes that we made after transitioning to a plant-based lifestyle. I was amazed that we didn’t have to give up on any of the flavors or textures after cutting out the animal products.

Easy Vegan Oil-free Chickpea “Tuna” Salad Sandwich

Super easy and delicious vegan Chickpea Salad. Comes together within minutes for a healthy lunch.

Equipment

  • Food Processor

Ingredients

  • 1 Can Chickpeas
  • 1/4 Onion
  • 1 Carrot
  • 2 tbsp Capers
  • 3 spears Dill Pickles
  • 1 clove Garlic
  • 1 handful Fresh Dill
  • 2 tbsp Tahini
  • 1 tsp Dijon Mustard
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • 1/4 Lemon (Juice)
  • 1 bun Sprouted Whole Wheat Bread

Instructions

  • Clean and cut the ingredients into smaller pieces and add to your food processor.

  • Pules until combined.
  • Serve on your favorite toasted bread with tomatoes, spinach, and some lemon. Enjoy!
  • PS. If you want a different texture, save half of the Chickpeas and instead of adding them to the food processor, mash them lightly with a fork and then stir them into the rest of the mixture.

(We love Ezekiel’s Sprouted Whole Grain Burger Buns for this meal).

Some extra tips – chickpea tuna salad vegan

Please use organic products when possible for this chickpea tuna salad vegan sandwich. Always read the ingredient list to make sure you get what you want. It’s been so eye-opening reading food labels for the last couple of years. My son is sensitive to cow’s milk, therefore we’ve been making sure he’s dairy-free for a long time now. Even before we made the full switch to being vegan. It’s been so amazing to watch his asthma and skin issues just disappear and seeing him thrive.

We keep learning

We’ve been finding lots of interesting and surprising ingredients like added oil, dairy, all sorts of sweeteners, and other additives we never heard of in foods that we thought were healthy. But, it’s not about being perfect, just doing the best we can and always learning how to expand our compassion to ourselves, our planet, and the animals. One meal at a time.

    Um…. I’m a little confused with the recipe..

    There’s a bunch of items and the last one is the “sprouted Bread”. The instructions say to ”
    Clean and cut the ingredients into smaller pieces and add to your food processor.”

    Does this include the bread? Is the bread used as a kind of binder to hold it together or is the bread used as a sandwich bun to put the “tuno” on?
