Delicious Vegan Oil-free pesto & roasted veggies

If you’re looking for a delicious and healthy dinner option that is easy to make, then this vegan oil-free pesto with roasted veggies is just what you need. It’s packed with flavor, nutrients, and is so simple to make that it’s perfect for busy weeknights.

Ingredients:

  • 1 can of cannellini beans, drained and rinsed
  • 1-4 garlic cloves (depending on your preference)
  • 1/4 cup of nutritional yeast
  • 1/4 cup of oil-free veggie broth
  • Fresh spinach
  • Fresh basil
  • Juice and zest from 1 medium lemon
  • Spices to taste: black pepper, garlic powder, onion powder, and coconut aminos

Instructions:

  1. In a food processor, combine the drained and rinsed cannellini beans, garlic, nutritional yeast, veggie broth, fresh spinach, fresh basil, lemon juice and zest, and spices. Blend until smooth and creamy, adding more veggie broth if needed to achieve the desired consistency.
  2. Preheat your oven to 400°F (200°C).
  3. Prepare your veggies by rinsing them with water and slicing them into bite-sized pieces. Place them on a baking sheet lined with a non-stick mat or parchment paper.
  4. Roast the veggies in the preheated oven for 10 minutes, then stir them and roast for an additional 10 minutes, or until they are tender and lightly browned.
  5. Serve the roasted veggies with the vegan oil-free pesto on top.

This recipe is not only delicious but also healthy since it’s oil-free, which makes it a great option for anyone who wants to avoid added oils in their diet.
